freezing. perhaps you could talk about how snowflakes form. there were several phase transitions in the early universe as it cooled, such as plasma to neutral gas when the cosmic microwave background radiation was emitted. though obviously they occurred at much higher temperature than the freezing of water does, they have that kind of sharp change in properties in common.
